Seriously. I probably always say that, but I actually mean it this time. You may know that I was away all week with my grandma. She got eye surgery on Tuesday morning [I had to wake up at 4 in the morning ... I really don't even want to think about that] and it would honestly take me way to long to tell you all about it. Let me just say that the surgery itself was only 45 minutes but we were there for 7 HOURS. Seriously. Thankfully, everything went well and I spent the week taking care of her and her dog and making sure she was fed and had eye drops in her eye and all that kind of thing. Then my aunt & cousins came and picked me up on Friday night, we went out to dinner [seriously need to tell you all about that .. some other time!] and then headed home. They ended up sleeping over so the weekend was a lot of fun.
On Saturday, I finally got my books for the next semester which starts, um. Tomorrow. Yeah.
So since I've had such a crazy week, I thought I should share a simple recipe. This is as simple as it gets. Really, these are so easy, I'm not sure they can even be classified as a dessert. All you have to do is unwrap some Rolo candies, place one on top of a waffle pretzel and repeat with how ever many you'd like, place them all on a parchment paper lined cookie sheet, bake, top with another pretzel. And you're done. And then you've got Rolo Pretzel Sandwiches. Easy. Addicting. Amazing. Enjoy :)

Rolo Pretzel Sandwiches
Waffle pretzels
Rolo candies
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper. Arrange the pretzels in a single layer on the baking sheet. Top each pretzel with an unwrapped Rolo candy. Bake for 2-3 minutes or until the Rolo candies are shiny. Immediately top with another pretzel and gently press down. Cool completely.
