Twix bars in brownies. Or butterfingers in cookies or peanut butter cups in pie. I really want to make those last two desserts. I blog about desserts, so obviously they are one of my favorite things, ever. And candy is one of my other favorite things ever. Twix bars are my favorite, followed closely by 3 Musketeers and then Butterfingers and Milky Way bars. So combining desserts and candy is just pure genius. It's one of my favorite things to do in the kitchen and I'm planning on doing a lot more of it! I also want try some homemade candies, especially homemade peanut butter cups!
Once I saw this recipe for 3 Musketeers Cupcakes, I knew I had to make them. I love 3 Musketeers. And I love cupcakes. Together, they are a match made in dessert heaven. :) The cupcakes are chocolatey and insanely moist. You'll bake the cupcakes for a few minutes and then press a piece of 3 Musketeer into the partially-cooked batter before returning to the oven to finish cooking. The original recipe I saw called for 3 Musketeers frosting! But that seemed just a little bit too heavy for me, so I opted to go with my very favorite chocolate frosting. It's the best! It's silky smooth and buttery and oh-so-chocolatey. It is the perfect frosting for these addictive cupcakes! Enjoy!
Cookies and Cups, Frosting: Brown Eyed Baker)
3/4 cup cocoa powder
1-1/2 cups all-purpose flour
1-1/2 cups granulated sugar
1-1/2 teaspoons baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
3/4 cup buttermilk
3/4 cup warm water
3/8 cup vegetable oil
1 teaspoon vanilla extract
12 fun-sized 3 Musketeers bars, chopped in half
1-1/4 cups (2-1/2 sticks) butter, softened
2-1/2 cups confectioner's sugar
2 teaspoons vanilla extract
5 ounces semi-sweet chocolate, melted & cooled
Preheat oven to 350 degrees. Line two muffin pans with liners.
In a stand mixer, sift together cocoa powder, flour, baking soda and baking powder. Add in the sugar and salt. With your mixer on low speed, at eggs, one at a time then add buttermilk, water, oil and vanilla. Mix on medium for 2 minutes or until combined.
Fill liners halfway with batter. Bake for 5 minutes. Remove from oven and gently press a 3 Musketeers bar half into each cupcake. Bake for 10-15 minutes more or until set. Cool completely on wire rack.
Using the wire whisk attachment of your stand mixer, whip the butter on medium-high speed for 5 minutes, stopping to scrape the bowl once or twice.
Reduce the speed to low and gradually add the powdered sugar. Once all of the powdered sugar is incorporated, increase the speed to medium-high and add the vanilla, mixing until incorporated. Add the melted chocolate and whip at medium-high speed until light and fluffy, about 2 minutes, scraping the bowl as needed to incorporate all of the chocolate. Pipe onto the cupcakes. Garnish with a 3 Musketeers bar half if desired. YIELD: 2 dozen cupcakes
